Caelum is a family winery, inspired by nature and the heavens, named after a constellation visible in the Southern Hemisphere. Trained in all aspects of agronomy, engineering, oenology and wine tasting, theirs is a fine project, with strong branding, gaining positive responses from wine critics and consumers.
The first focus of the winery is to ensure the best-possible sustainable growing practices at their Mendozan estate - growing excellent grapes and pistachios, and continuously striving for improvement, and long-term partnerships.
The estate produces a full wine range with a good selection of quality grapes. The entry-level wine series - Estate Selection Line (pictured left) are fresh and fruity wines, including Chardonnay, Malbec and Cabernet Sauvignon varietals, and a Malbec / Pinot Noir Rose blend.
The Reserva line (the first 3 bottles pictured above) are French oak barrel-aged for 12 months (Malbec and Cabernet Sauvignon varieties, and 6 months for Blend de Blancs (the white blend of Fiano, Chardonnay, and Sauvignon Blanc). These wines are distinguished by their complexity, fruit character and persistence.
Caelum’s Gran Reserva wine series has a powerful branding based on the star constellations visible from their beautiful wine estate. All wine parcels are carefully-selected and lovingly processed, with constant care and attention to ensure expressive wines with great complexity and length. Fiano and Pinot Noir are barrel-aged in French oak for 12 months, while the Malbec and Cabernet Sauvignon varietals, and the Icon Gran Corte blend (50% Montepulciano, 20% Cabernet Sauvignon, 15% Malbec, 10% Petit Syrah and 5% Cabernet Franc) are all barrel-aged for 20 months.

Caelum also produce their own sparkling wine series - Eclat which means glow in French. The idea has been to recreate teh same traditional Champenoise methods in producing these wines. Similar to champagne wines, Eclat wine have a low sugar content, good acidity and extended contact with the lees to develop excellent complexity. There are 3 Eclat labels - Silver Extra Brut, which is 67% Chardonnay and 33% Pinot Noir, 36 months on the lees. Eclat Reserva Extra Brut has a the gold label, which is 100% Chardonnay which has 48 months on the lees, and Eclat Solera Extra Brut with the rose label, which is a blend of 3 different Chardonnay vintages, given 60 months on the lees. These are truly some of the finest sparkling wines produced in the Southern Hemisphere.
